How To Create Barburrito's Ranchera Salsa

If you’ve ever wondered how they make their salsa so tasty, now you can create it yourself with their recipe for the perfect medium-spiced Ranchera Salsa.
You will need:
6 vine tomatoes, quartered
1 small white onion, cut into 8
2 jalapeno chillies, halfed lengthways
1 garlic clove
1 tsp cider vinegar
1 tsp salt, or seasoned to taste
1 tsp sugar, or to taste
½ tsp chipotle sauce (optional
2 tsp coriander, finely chopped
Put the tomatoes, onion, jalapenos and garlic on to a skillet (or under a hot grill), cooking until they are soft and well charred. Transfer to a blender and add the vinegar, sugar and lime juice. Blend until salsa is the desired consistency (if necessary add a little water). Transfer to a bowl and stir through salt, chipotle sauce and coriander. Let the salsa cool before serving.
